I only have Okita and Sigurd as my ST SSR Saber. Even so, I'm rarely using them. I'm comfortable with Caesar and Bedi alone.
If I had to choose, I go with Okita, mainly because it feels really comfortable to use collecting crit,stars and quick chains. It kinda adapts to my playstyle even with 1/1/1 in her skill levels.

Musashi for plain damage, Nero for full support and Benienma for hybrid Support+DPS.
If you don't want to have too many sabers, Beni is a good choice as she is a party-wide support while Nero is singular support (partywide 20% attack & charge is better than 30% attack & charge on single ally in my opinion). Also, she outdamages Nero against Chaotic or Evil enemies (which majority enemies have normally). Otherwise go for Nero.
Thanks. Just to clarify, this is not a "who should I roll for?" kind of poll (I have 7 SSR Sabers, 3 of which are in this pool, so I'm fine). It's just for fun to see which Servant is considered the best at their role. I think many will vote for their favourite anyways but still I tried :D
I think it's hard to say "this is the one and only gameplay wise", because it depends so much on situations.
If you need a support/DPS-> Bride is the way to go with 30% battery/NP gain/ATK up/Heal and a good ST damaging NP..
Def Pierce on Okita's NP trivializes content like the Leonidas CQ from last Gilfest..
Musashi is one of the highest dmg ST Sabers in the game with an Invul pierce and Double hit(doubles NP gain + Star gen ).. Just remember that once Caesar can outdamage a NP1 Musashi so unless someone has NP2 or higher or has a need for the invul pierce(which can be given by a CE) then he is better..
Beni has her evil damage which contains a lot of common enemies and she has some decent utility but I won't take her just for utility alone unlike Bride..
Saber Stolf and Discouri are unknowns to an NA tramp like me.. but I have heard that they aren't that good?
In my opinion:
Okita, maybe the best currently
Musashi, big damage but lack sustainability
Dioscuri, great np loop but lack a bit damage compare to the other 2, they're made for quick fights but rely on np looping so lose momentum when skills are on cool down
Dioscuri got my vote cuz they got that ignore-invincibility before executing their NP & the double Castoria system later would help a lot
